Multi-read content how to make pickling lime

Lime salt is calcium hydroxide. It is also known as “food grade lime” because when making calcium hydroxide, processors ensure that the process remains pure and creates nothing without waste (for example, it does not is not made in old rusty barrels).

Salted lime helps improve the firmness of pickles by introducing calcium to fortify the pectin in the pickled vegetables. When using, a vegetable such as a cucumber is pre-soaked in salted water, for up to a day, after which the pickled food is washed thoroughly – at least 3 times – before the soaking begins cleanly said. .

Because lime salt is alkaline, you have to remove everything. It is not always thoroughly rinsed, leaving some alkali and thus weakening the required acidity of the pickle batch. For this reason, cases of botulism have been reported, and for this reason many reputable home canning authorities are hesitant to recommend its use. Some claim to instead use vine leaves for crunching instead of lime, most authorities say that if you use fresh cucumbers and prune the flowers correctly, the leaves will not add to the effect.

Industrial lime, whether agricultural or factory, can in no way replace lime: lime can contain dangerous contaminants unless it is certified as food immersion lime.

When buying, be careful if you see “lime powder”. It can be a powder flavored with lime (as in fruit), which is completely different. While it’s not safe to dip your produce in it, it might make everyone at the church picnic wince like they’ve never done before.

How to use slaked lime from reputable home canning sources

The USDA (U.S. Department of Agriculture) Complete Guide to Home Canning says,

So the Serviceability (SETP) says,

The Ball / Bernardin Complete Book didn’t think to use Pickling Lime.

The Ball Blue Book (37th Edition, Fall 2014) and Bernardin’s Guide (2013) do not contain any lime pickling recipes or instructions for use.

Noted pickup author Linda Ziedrich includes a number of recipes that call for it, but on the condition that it is only used for recipes that allow it and thus compensate for its reduced acidity. She writes,

Culinary advice

Salted lime can produce pickles so brittle that they break easily.

You can still make delicious crispy pickles without it: just use the freshest vegetables possible (especially for cucumbers), cool them before you start, and for melon mice, cut off the ends of the blossoms where the emollient enzymes live ( cut both ends if unsure – shave as close as a razor.)

The secret of lime soaking

Here are some tested pickle recipes from reputable sources that use pickled lime (as of 2016)

USDA’s Complete Guide to Home Canning, 2015 Edition: Bread and Butter (pages 6-9), Quick Sweet (pages 6 – 12) and Jalapeno Pepper Rings (Pages 6 – 23).

Linda Ziedrich, The Joy of Pickling, 2009: Bread and Butter (page 90), Cantaloupe pickles (page 260), Picture pickles (page 261), Green tomato pickles (page 127).

Easy to store: Bread and Butter (page 131), Quick sweetness (page 135), Jalapeno pepper rings (page 148).

Alternative products

A commercial product, calcium chloride(sold as Ball/Bernardin’s Pickle Crisp®) can help improve the texture of vegetables for pickling (although it cannot restore the crunch lost when vegetables wilt.) It’s easy and safe to use. : it is usually added in small quantities to the jars as they are filled.

Historical notes

The last Ball Blue book with a recipe called lime pickling was published in 1979 (a reprint of its 30th edition in 1977). Their “Crystal Pickles” on page 36 calls for ⅓ oz (9 g), with these usage instructions:

“Dissolve quicklime in water. If the brine is cloudy, pour it through cheesecloth. Pour brine over tomato slices; Leave to stand for 24 hours, stirring occasionally. Gum. Rinse thoroughly with cold water several times to remove all the limescale; soak in cold water for 4 hours; change the water every hour; desiccate.”

There is no other recipe for using salted lime in Ball Blue Book editions since 1979.
